Coconut brown rice pudding with caramel banana and raisins…

Last night I made a curry served with brown rice so this morning calls for leftover rice pudding for breakfast… So simple and delicious! 

In a pot combine pre cooked brown rice, chia seeds, coconut cream, raisins and finely chopped banana  - if you don’t have enough rice leftover to feed the household you can easily add in oats to make it go further.

Cook until the banana gooey and caramel like, adding water throughout cooking process if needed.

I’ve served mine with a splash of creamy Lewis Road silver top milk and coconut flakes! Delish! A xx

One bite left…

Toasted Cheesy Cauliflower & Broccoli Loaf spread with avocado, topped with tomato and sprinkled with Yeast Herb Salt and cracked pepper – delightful!

•	¼ head of broccoli
•	¼ head of cauliflower 
•	3 eggs
•	1 cup almond meal – you can use ground almonds they are way cheaper
•	½ cup parmesan cheese 
•	Salt and pepper
•	¼ cup almond milk (optional)

PREHEAT oven to 180 degrees and line loaf tin with baking paper
BLITZ broccoli and cauliflower in a food processor until it’s like rice
CHOOSE your preference, either steam on the stove or pop in the microwave until soft
LET cool and wring out mixture in a clean tea towel to remove moisture
ADD all ingredients excluding almond milk to a bowl and mix
POUR in almond milk depending on how dry the mixture is
POP mixture in the loaf tin and place in the oven until a skewer comes out clean and the top is crispy

I think I’ll try sprinkling extra cheese on top and adding nutritional yeast to the mixture for extra nutrient punch and deliciousness!

Here’s to appreciating the simple things…

For the last five months I’ve been living with a very minimal kitchen set up.  It’s kinda like camping, I’ve had no oven, all cooking has been outside on a gas hob and my bench space is less than 1m squared!

I’m currently house sitting and the house comes with a fully equipped kitchen, oven and appliances included - I feel so treated!

I’ve been celebrating by baking and cooking meals which specifically require the use of an oven.  It’s fair to say I’m a little out of practice but this morning I baked a grain free cheesy parmesan cauliflower and broccoli loaf which is a delightful match for this arvo’s green smoothie!

Today I Popped into Mondays Wholefoods (@mondayswholefoods) for delightful smiles from the beautiful ladies behind the counter along with insanely delicious food and beverages! 

I totally recommend any day this week you pay Eleanor (@petitekitchen) and Hannah (@health_yeah) a visit!

From today’s menu the Moroccan Buckwheat Salad with balsamic marinated mushrooms was divine - it’s got fennel seeds and dates! Also a must try is the Java Latte - a herbal “coffee” with carob, barley, chicory, dates, almonds and figs! πŸ‘Œ

πŸ’•πŸ™ My mind, soul and inner child have been craving spontaneous adventure recently so yesterday I pushed the books aside and listened to my hearts desires…

I enquired into my body with OmSunday yoga then picked up breakfast and produce from the farmers market with my baby daddy before heading to the seaside for beach strolls, refreshing autumn swims and clay discoveries on the ocean floor!

It was here, as the tide withdrew, that I spent a long time in the moment letting my inner child play in the mud! I drew it on my body and baby bump like paint, felt it squish between my toes and allowed my creativity to flow by moulding it into various shapes!

Throughout the day I had wonderful moments of surprise bumping into gorgeous friends, filling my heart with happiness and topping my up luminous energy!
