Coconut brown rice pudding with caramel banana and raisins…
Last night I made a curry served with brown rice so this morning calls for leftover rice pudding for breakfast… So simple and delicious!
In a pot combine pre cooked brown rice, chia seeds, coconut cream, raisins and finely chopped banana - if you don’t have enough rice leftover to feed the household you can easily add in oats to make it go further.
Cook until the banana gooey and caramel like, adding water throughout cooking process if needed.
I’ve served mine with a splash of creamy Lewis Road silver top milk and coconut flakes! Delish! A xx
