Lunch, the hardest meal of the day…

Since becoming a Mama I’ve found making a nutritious lunch pretty tricky.  You become awesome at doing most things one handed but I haven’t nailed cutting and cooking with a child in arm! 

πŸ™ To get around this I’ve turned to the trusty smoothie. Today’s consists of a leftover soaked breakfast base (chia and pumpkin seeds, linseed and coconut) with the addition of Clean Lean Protein, Good Green Stuff coconut cream, peanut butter and plenty of baby silverbeet.

Sunny lunch dates at the HEALTHYSELF HQ…

A good 3/4 of the plate covered with colourful vegetables. The vegetarian and the omnivore both getting their protein quota - fresh fish from the big bro and organic tempeh.

Did you know Tonzu tempeh has 17.4g of protein per 100g serve?! We love to lightly fry it in coconut oil and have it as is or dress it up with a marinade.

This kid’s stolen my heart - yes there was only one in there…

I can’t believe it’s been over a month since Vinnie and I welcomed our beautiful son, Cassius Iluca Watson, into our lives on 5th September 2014, weighing in at 3.68kg and 54cm tall.

I’ve spent the last month happily hiding away in my maternal sanctuary at home, taking Cas for plenty of walks and delighting in spending time as a little whanau - which just makes my heart swell with love! ❀️

Pictured here just days old, Cas has already grown 5cm and truly come into the world spending plenty of time with eyes open taking it all in and no doubt daydreaming of magic! βœ¨πŸ’› A xx

Food in a minute…

More like 10 minutes - but that’s still pretty quick!

Tonight in my mini kitchen I whipped up a delicious salad consisting of lentils, raw grated beets and carrot, raisins, spinach, pumpkin, sunflower and sesame seeds, avocado and tempeh cooked in coconut oil with a lemon juice dressing! πŸ‘Œ

I’m nearly 40 weeks pregnant and feeling pretty tried - it’s a good thing great food doesn’t have to take a long time! A xx

It was an absolute delight to watch epic friends strut their stuff on the runway in the Lululemon fashion show this evening!! 

From the moment it started I was inspired to move my body - to practice yoga, get outside and run or swing some kettle bells!  Now that’s my kinda fashion show!

It blows my mind every time I think about where we came from, that we all started as tiny beings living inside our beautiful mothers.

Shaped by our environment and learning from experiences and interactions with others to become the individuals we are today - but we all started cradled inside our mothers pukus.

I am blessed to hold a radiant new soul inside my belly while it prepares for it’s entry into this world.  The creation of new life is so precious and overwhelmingly extraordinary! A xx

Coconut brown rice pudding with caramel banana and raisins…

Last night I made a curry served with brown rice so this morning calls for leftover rice pudding for breakfast… So simple and delicious! 

In a pot combine pre cooked brown rice, chia seeds, coconut cream, raisins and finely chopped banana  - if you don’t have enough rice leftover to feed the household you can easily add in oats to make it go further.

Cook until the banana gooey and caramel like, adding water throughout cooking process if needed.

I’ve served mine with a splash of creamy Lewis Road silver top milk and coconut flakes! Delish! A xx
